Rainbow Wraps

Build a rainbow you can eat! Pile the colors in stripes and roll it all up.

What you need

  • 4 soft tortilla wraps
  • 1 cup grated carrots
  • 1 red bell pepper, cut into strips
  • 1 cup purple cabbage, shredded
  • 1 cup sweetcorn
  • A big handful of lettuce leaves
  • 3 tablespoons hummus or cream-cheese style spread

How to make it

  1. Wash your hands, then lay a wrap flat on a clean plate.
  2. Spread hummus all over the wrap like you're painting it.
  3. Lay the veggies in rainbow stripes across the middle — carrots, pepper, cabbage, corn and lettuce.
  4. Roll the wrap up tightly, pressing gently as you go.
  5. Slice it in half and look at your rainbow before you munch it!

Banana Pancakes

Fluffy Sunday-morning pancakes with banana and blueberries. A grown-up handles the hot pan!

What you need

  • 2 ripe bananas
  • 1 cup flour
  • 1 cup plant milk (oat or soy works great)
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • Blueberries and banana slices for the top

How to make it

  1. Mash the bananas in a big bowl with a fork until they're gooey.
  2. Add the plant milk and stir, then tip in the flour, sugar, baking powder and salt. Mix until smooth.
  3. Ask a grown-up to heat a non-stick pan on medium and add a tiny drop of oil.
  4. The grown-up pours small circles of batter. Wait for bubbles on top, then they flip each pancake.
  5. Stack them high, add banana slices and blueberries, and drizzle with syrup. TALL STACK CLUB!

Hummus Rockets

Dunkable hummus with carrot boosters and cucumber rockets. Three… two… one… CRUNCH!

What you need

  • 1 can of chickpeas (grown-up drains it)
  • 2 tablespoons tahini or smooth peanut butter
  • Juice of half a lemon
  • 1 small garlic clove (or a pinch of garlic powder)
  • 2 tablespoons water
  • Carrots and cucumbers, cut into sticks

How to make it

  1. Ask a grown-up to open and drain the chickpeas, then pour them into a bowl.
  2. Add the tahini, lemon juice, garlic and water.
  3. Mash everything with a fork — or ask a grown-up to blitz it in a blender until creamy.
  4. Scoop the hummus into a bowl and make a swirl in the top with a spoon.
  5. Stand cucumber rockets and carrot boosters around the bowl. Countdown… and CRUNCH!
