Lobsters can live 50–100 years, migrate hundreds of kilometres, and feel pain. In most kitchens, they are still dropped into boiling water — fully conscious — and take up to two minutes to die.

The Evidence Is No Longer Contested

Lobsters are remarkable animals. They can live for over a century, navigate by Earth's magnetic field, communicate through chemical signals released from glands beneath their eyes, and migrate seasonally in long single-file 'lobster trains' along the seabed.

Following a landmark 2021 review by the London School of Economics of 300+ scientific studies, the UK Animal Welfare (Sentience) Act 2022 formally recognised decapod crustaceans — lobsters, crabs, prawns — as sentient beings capable of feeling pain.

Despite this, the most common way lobsters are killed worldwide remains submersion in boiling water while still alive and conscious. EEG measurements show neural activity consistent with pain for up to 130 seconds after immersion.

Supply chain

Months in a Tank Before the Kitchen

Most lobsters spend weeks or months in storage tanks at restaurants or supermarkets — with rubber bands tightly binding their claws, in conditions that are entirely unlike their natural environment. Mortality in transit and storage is high; survivors are visibly stressed.

Crab and prawn aquaculture (particularly the tropical prawn industry) has additional ecological costs: mangrove destruction, antibiotic-laden effluent, and severe labour abuses including documented modern slavery.

We don't need new arguments to act differently. We need new defaults.

Alternatives

The Plant-Based Seafood Market Has Caught Up

Brands like Konscious Foods, Good Catch, BeLeaf, and many independent producers now make convincing plant-based 'lobster', 'crab cake' and 'prawn' products from konjac, seaweed, and pea protein.

For home cooking, hearts of palm and king-trumpet mushrooms make startlingly convincing 'crab' and 'lobster' textures when shredded, seasoned with Old Bay or kelp, and folded into rolls or bisques.
