Is rennet vegan?
Why
rennet is a by-product of slaughter. It only exists because animals are killed, so buying it supports the same industry.
Rennet is sometimes vegan-relevant but traditional rennet is not vegan: it is an enzyme complex taken from the fourth stomach of slaughtered unweaned calves. Microbial and fermentation-produced (FPC) rennet are animal-free, and today they curdle most of the world's cheese.
Where it comes from
- Animal rennet is extracted from calf abomasum, a slaughter by-product, and is still required for many PDO cheeses such as Parmigiano Reggiano.
- Microbial rennet is produced by moulds such as Rhizomucor miehei.
- Fermentation-produced chymosin (FPC) uses the calf gene inserted into yeast or fungi — no animal is involved in production, though some people avoid it on GMO grounds.
- Plant coagulants such as cardoon thistle are used in some Portuguese and Spanish cheeses.

Rennet matters most for vegetarians — vegans skip dairy cheese entirely — but it explains why a cheese labelled 'vegetarian' is a different claim from 'vegan'. When a label says only 'enzymes' or 'coagulant', it is usually microbial, but protected-origin cheeses are the reliable exception where animal rennet is mandated by the standard.

How to check a label
Ingredient lists are legally required to name allergens such as milk and egg in bold, which catches most hidden animal ingredients. E-numbers and processing aids are the gap: E120, E441, E542, E904 and E920 are animal-derived, and processing aids often go unlisted. When in doubt, look for a certified vegan mark or ask the manufacturer directly — most reply within a few days.

Is vegetarian rennet vegan?
Vegetarian rennet contains no animal tissue, so the rennet itself is animal-free — but the cheese it sets is still made from cow's milk, so it is not vegan.
Which cheeses always use animal rennet?
Several protected-designation cheeses require it by law, including Parmigiano Reggiano, Grana Padano, Gorgonzola and Pecorino Romano.
What sets vegan cheese?
Plant-based cheeses use starch and coconut oil for melt, or cultured cashew and soy bases with traditional bacterial cultures for flavour — no coagulating enzyme from an animal is involved.
