Why

Gelatin is not vegan. It is collagen extracted by boiling the skin, bones and connective tissue of pigs and cattle, so it is an animal slaughter by-product in every commercial form.
Where it comes from
- Pigskin is the largest single source worldwide, followed by cattle hide and demineralised bone.
- Fish gelatin exists and is used in some kosher and halal products — still not vegan.
- Hydrolysed collagen and collagen peptides sold as supplements come from the same raw material.
- There is no plant gelatin: agar, carrageenan and pectin are different gelling chemistries, not gelatin substitutes by name.

Marshmallows, gummy sweets, jelly, mousses, low-fat yoghurts, capsule shells and some vitamin gummies are the usual carriers. Agar-agar (from seaweed), pectin (from fruit), carrageenan and aquafaba all replace it depending on the texture wanted — pectin for chewy sweets, agar for firm set, aquafaba for foams.

What to use instead
agar-agar — It does exactly the same job in coffee, cooking and baking, with no change in method.
How to check a label
Ingredient lists are legally required to name allergens such as milk and egg in bold, which catches most hidden animal ingredients. E-numbers and processing aids are the gap: E120, E441, E542, E904 and E920 are animal-derived, and processing aids often go unlisted. When in doubt, look for a certified vegan mark or ask the manufacturer directly — most reply within a few days.
Common questions about gelatin
Is there a vegan gelatin?
Not literally — gelatin is animal collagen by definition. Agar-agar is the closest one-for-one setting agent, and pectin is used for gummy textures.
Are marshmallows vegan?
Standard marshmallows are not: gelatin gives them their structure. Vegan marshmallows do exist and use aquafaba or carrageenan instead.
Is gelatin in medicine capsules vegan?
Standard hard and soft capsules are gelatin. HPMC (hydroxypropyl methylcellulose) capsules are the plant-based equivalent, and many pharmacies can advise on an HPMC version of the same drug.
